Oklahoma State University’s Robert M. Kerr Food and Agricultural Products Center will offer its intensive five-week Meat Mastery Training in 2026, continuing efforts to build a skilled workforce for the meat-processing industry.

This hands-on program provides participants with multi-species training in live-animal handling, slaughter, fabrication and value-added product development, along with four industry-recognized food-safety certifications: HACCP, Sanitation, Food Defense and Good Manufacturing Practices.

Participants gain real-world experience through on-site training, expert instruction, and exposure to commercial processing operations. The program is open to individuals from Oklahoma and beyond who want to become proficient in meat harvesting and processing—whether entering the field or advancing within it.

Aspiring and current meat-processing professionals, processors seeking employee training, and individuals interested in technical workforce development.

Hosted at FAPC. A hands-on workshop guiding youth through the beef production process beyond the live animal, focusing on carcass fabrication, primal cuts, and meat identification. Participants will evaluate yield and quality, work through cut sheets, and gain practical knowledge in meat selection, preparation, and consumer decision-making. This workshop will provide participants with a practical introduction to soil health and its importance for gardening, land management, and overall productivity. Attendees will learn how to properly collect a soil sample through a live demonstration led by OSU Extension, ensuring accurate and reliable results.

Participants will also gain experience using a take-home soil testing kit and learn how to interpret those results. As part of the workshop, we will compare results from the soil testing kits with laboratory results from OSU’s Soil, Water & Forage Analytical Laboratory (SWFAL), helping participants better understand how different testing methods can be used together to inform decisions.

Each participant will receive a soil testing kit to take home, providing a useful tool to continue learning and applying these concepts on their own property.

This workshop is limited to 20 participants, so early registration is encouraged.

Whether you are a longtime OAEAAA member or new to OSU Extension, we hope you will consider joining us for three days of professional development, networking, and fellowship.

To provide a preview of what to expect, several highlights are planned throughout the conference.

Monday evening will feature a Family Night Out Shrimp Boil — bring your lawn chairs and stories for an evening of fellowship.

Tuesday morning will include tour options at OK Steel & Wire or the Chickasaw Gardens, as well as Savage Pecan Equipment. Tuesday evening will feature the annual Member Awards Banquet and New Officer Installations, followed by the always entertaining benefit auction. Participants are encouraged to begin identifying items to contribute to the auction.

Wednesday will conclude with an administrative update as a key highlight of the morning before attendees depart energized and ready to make an impact in the coming year.

The workshop provides practical guidance on identifying vulnerabilities in facilities and supply chains, developing mitigation strategies, and meeting regulatory and certification expectations. Content aligns with the U.S. Food and Drug Administration’s Intentional Adulteration rule under the Food Safety Modernization Act and Global Food Safety Initiative–benchmarked schemes, including SQF and BRCGS.

Participants will gain hands-on experience with food defense vulnerability assessments, food fraud vulnerability assessments, and recognized tools such as TACCP- and CARVER-based approaches. Real-world case studies illustrate common threats, regulatory implications and industry best practices.

The workshop is designed for quality managers, food safety professionals, auditors and operations personnel seeking to strengthen food defense and food fraud programs, improve audit readiness, and protect public health and brand integrity.

Who Can Participate?

Participants will:

Acquire a 1- to 10-day-old beef or dairy calf between April 15 and June 15, 2026Provide daily care, halter break their calf, and keep feed, financial, and health recordsNominate up to two calves by June 17, 2026 (only one may be exhibited)Be placed into an age group and evaluated on their knowledge and care of their projectParticipants have the option to exhibit a calf that remains on a nurse cow, a great way to gain hands-on experience in a real-world livestock setting!

The purpose of the 4-H Table setting contest is to offer 4-H members an opportunity to learn how to properly set a table as well as allowing the member an opportunity to be creative in their theme and how they reflect that theme in their work.

Members will select a formal or an informal theme and bring all necessary items. It is the member’s responsibility to bring all items, including, but not limited to: card table or small table, table covering, centerpiece, dishes and silverware to match the menu (setting for one person).
